From the moment he found an abandoned four-month old puppy on the side of the road, Cairo was Tom’s constant companion. The two shared more than a decade of adventures on the ranch and vineyards, followed with evenings curled up by the fire, as Cairo filled Tom’s heart with his devotion. Our Cairo Vineyard is an homage to this beloved friend. We make our home at Gamble Family Vineyards in the heart of Oakville, adjacent to the Cairo Vineyard from which this Cabernet hails. The vines are planted to Clone 337. These valley floor vines rest upon clay-loam soils, producing fruit with sensuous tannins and rich, deep flavors.
The Cairo Vineyard is harvested over several days. Each row – and even each vine – is strategically picked at ideal ripeness. The fruit is gently delivered to its fermentation vessel and cold soaked. Following fermentation, the wine undergoes a 20-month aging process in carefully selected barrels prior to bottling. Color, flavor and tannin abound in Cairo as a finished wine.
